I had to take a break from Project Pioneer Woman in order to celebrate Alea’s birthday!!! She’s got a deep and abiding love for her Grandma Sue’s Italian Creme Cake, so Jay made her one this afternoon for her birthday.

For cake:
5 eggs – separated
2 cups sugar
1 stick butter
1/2 cup crisco
1 tbsp vanilla
1 cup buttermilk
2 cups flour
1 tsp baking soda
1/2 tsp salt
2 cups angel flake coconut
1 cup chopped nuts (we used hazelnuts and pecans)
For icing:
1 (12oz) package cream cheese
3/4 stick butter
1 1/2 tbsp vanilla
1 1/2 cups powdered sugar (sifted)
1 cup chopped nuts
1 cup flaked coconut

For Cake:
Preheat oven to 350 degrees.
Grease and flour three 9″ baking pans.
Beat egg whites and set aside.
Cream together sugar, butter and crisco.
Add vanilla and egg yolks one at a time, beating well after each addition.
Add buttermilk alternately with flour, baking soda, and salt.
Stir in coconut and nuts.
Fold in egg whites.
Pour mixture evenly into the 3 greased pans.
Bake for 30-40 minutes
Let cool.
For Icing:
Mix together all ingredients. When cake is cool, place the first layer face down on your cake plate. Spread a layer of icing evenly on the surface. Place second cake on top, and repeat steps above. Finally, lay the top cake in place and ice the top and sides.
