Day 8: I sort of cheated on this edition of Project Pioneer Woman. I made Ree’s Chicken Tortilla Soup last night,  but my photo was terrible. The truth is, I’ve made this recipe before, so the pic I’m using is the one I took the first time I made it.

Nat’s Changes:

I’m not going to lie, I hacked the hell out of this recipe. I ended up purchasing a rotisserie chicken, shredding it and popping it into a crockpot. I then sautéed the peppers/onions/garlic along with the seasonings in a smidge of butter and then dumped that into the crockpot as well. I added some additional spices to this (a seasoning for carne asada, a little more cumin and chili powder than called for and topped it off with queso fresco, fresh cilantro from my garden, as well as a giant hunk of avocado. I also tossed in some of those flavored tortilla strips that some folks put in their salads. This was DELICIOUS.  I served it with a southwest salad.  Jay really liked this. Super flavorful, delicious, and freezes like a charm.
