I know many of you guys are on Paleo– and I’m sorry that Jay’s baking spree is probably cringe worthy for you guys, but this time I really, REALLY feel sorry for you. These were just absolutely delightful. We ate the entire batch of them plain– but I can envision these as a delicious base to a fabulous cookie or special dessert. Some of you will recognize this as the base for Jay’s tart from a few weeks ago. Anyway– I would love to see these paired with some fresh fruit and creme fraiche. Delicious!

Nat’s Notes: You should never make a double batch of these. I promise that ┬áif you make them– you will eat them. If you make double– you will eat double. It’s terrible. And delicious.

Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/3 cups confectioners sugar
  • 1/4 tsp salt
  • 1 1/2 sticks butter
Instructions
  1. combine dry ingredients
  2. add cold butter, cut into cubes
  3. mix until a coarse meal
  4. refrigerate for 1/2 hour
  5. press into mold
  6. perforate
  7. bake at 325 degrees for 30-35 minutes
  8. cut while hot
